Happy Christmas 2014. What´s your favourite thing about Christmas……?
For us here at Where is Asturias, it´s definitely meeting up with old friends and whiling away the hours over good food and drinks, as we share a few “best of” stories from the year gone by. This year’s Happy Christmas 2014 video is a salute to just that!
We visited the friend and exceptional chef Nacho Manzano at his Double Michelin starred restaurant “Casa Marcial” in Arriondas, Asturias and we brought him a little gift… A box of Erizos de Mar, Oricios or Sea Urchins. They come into season around now and are considered a delicacy from the Cantabric Sea by the Asturians and Nacho himself is renowned for his take on this incredible seafood dish. In the meantime we enjoyed of Asturian Ciders, wines and beers together with prestigious sommelier Juan Luis García and Sandra Manzano.

SEA-URCHINS IN ACIDULATED AND AROMATIC HOLLANDAISE SAUCE OVER YOGURT:
INGREDIENTS FOR THE SEA URCHINGS (4 People):
12 sea urchins
INGREDIENTS FOR THE HOLLANDAISE SAUCE
2 egg yolks
2 c/s modena vinegar
2 c/s water
100 g. butter
INGREDIENTS FOR THE AROMATICS:
50 g. Greek yogurt
1 bunch of fresh chervil
Chive points
½ bulb of small fennel
1 stalk of celery and leafs
¼ of apple Gran Smith
Sorrel leaves
20 ml. water of sea urchins
2c/s Arbequina olive oíl
PREPARING THE SEA URCHINS:
Open the sea urchins with a scissors with a round cut at the top or mouth end (use gloves to protect your hands). Then remove the roe with a spoon very carefully so they don´t break. Save the water of the sea urchins to clean the roe later. If we clean them with their own water they won´t lose flavour. Save the shells for the final presentation.
PREPARATION OF THE AROMATICS
Carefully clean all the aromatic herbs. Peel the stalks of celery and cut into a fine Julianne. Do the same with the apple and the fennel. Mix the yogurt with the sea urchins water, a spoon of arbequina olive oil and salt flakes.
SERVING SUGGESTIONS:
You can place the sea urchins in a long platter preferably three urchins per plate. Fill every washed sea urchin shell with about 4 roe, carefully placing and covering them with two spoons of hollandaise sauce lengthwise. Give them two minutes under the oven grill in order for them to temper. Now add a soup spoon of yogurt and place the mixed aromatic herbs on top. Finish the dish with drops of olive oil and a pinch of sea salt over the aromatics. Serve with an excellent white wine or sparkling cider.

ORICIOS EN UNA HOLANDESA ACIDULADA Y AROMÁTICAS SOBRE YOGURT:
INGREDIENTES PARA LOS ORICIOS (4 Pax):
12 oricios
INGREDIENTES PARA LA HOLANDESA:
2 yemas de huevo
2 c/s vinagre de Módena
2 c/s agua
100 g. mantequilla
INGREDIENTES PARA LOS AROMÁTICOS:
50 g. yogurt griego
1 ramillete de perifollo fresco
Puntas de cebollino.
½ bulbo de hinojo pequeño
1 tallo de apio y hojas
¼ de manzana Gran Smith
Hojas de acedera
20 ml. agua de oricios
2c/s aceite de arbequina
ELABORACIÓN DE LOS ORICIOS:
Abrimos los oricios con una tijera por la parte superior en redondo. Sacamos con una cucharita las huevas con cuidado de que no se rompan. Colamos el agua de los oricios y la dejamos para limpiarlos de posibles restos si nos fuera necesario (al limpiarlos con su propia agua no les quitamos sabor).
ELABORACIÓN DE LOS AROMÁTICOS:
Limpiar los aromáticos con cuidado. Pelar los tallos de apio y partir en fina juliana. Realizar el mismo proceso para la manzana y el hinojo.
Mezclar el yogurt con el agua de los oricios, una cucharada sopera de aceite de arbequina y sal en escamas.
EMPLATADO:
En una vajilla un poco alargada disponemos dos cucharadas de holandesa en sentido longitudinal, encima las huevas de oricio perfectamente colocadas, calculando el equivalente a tres oricios por plato. Le damos dos minutos de salamandra para que atemperen. A continuación ponemos una cucharada sopera de yogurt también a lo largo y encima vamos colocando los aromáticos un poco entremezclados. Terminamos el plato con unas gotas de aceite y un poco de sal encima de los aromáticos.
